Azerbaijani Shah Pilaf, or “king’s pilaf,” is a celebratory dish featuring fragrant, saffron-infused rice layered with a rich filling of tender meat (like lamb), dried fruits (such as apricots, plums, and raisins), and nuts, all encased in a crispy, golden lavash crust. Served as a beautiful, dome-shaped package, it’s considered a royal feast and a highlight of Azerbaijani cuisine, prepared for special occasions and known for its aromatic, sweet, and savory flavors.
